Class95cafe tofu

"Have a mouth as sharp as a dagger but a heart soft as tofu" (Chinese Proverb). Remembered back in Singapore during my childhood days I was not born with a silver spoon in my mouth but plenty of tofu and "tow gay" when the time is bad my dad usual phrase in hokkien or mandarin " lucky that you still have something to put in your mouth. A twist of fate tofu now is considered a healthy lifestyle dish. Guess my dad will turn in his grave if he knows about it !! Our dish of tofu is garnished with vingear and sweetened with brown sugar to create a mixture of sour and sweet taste that "melt in your mouth and not in your hand". Pork Leg Menu and Why claypot Cooking

Most of the customers who came to our restaurant often ask the usual question why choose claypot cooking ? The most simplicity answer that I were give "My root that my mother and her mother before her used to earn a living out of claypot"
Ok, guy and gal maybe more than that the science that meet the eye.

Food cooks with a minimum of liquid and no additional fat seal in the fragrants . Food will cooked browns in clay as the ridges on the bottom of clay cookers elevate the contents to help the steam encircle the food and assist in totally browning the meat or even when you open the lids. On top of that more of the essential nutrients and vitamins are retained in foods cooked in clay pots. Pork leg meats cook especially well in clay cookers because they have a tendency to stay moist and juicy. Unglazed clay cookers can soak up a considerable amount of water, this is best for tenderizing meats because of the super steaming quality. Use this type of cooking for tougher cuts of meat, stews roasts, poultry, poaching, steaming and microwaving.

Researchers at Mt Sinai Medical found that foods cooked at BBQ or fried at high temperature contain greater levels of compounds called advanced glycation end products (AGEs) that cause more tissue damage and inflammation than foods cooked at lower temperatures. AGEs irritate cells in the body, damaging tissues and increasing your risk of complications from diseases like diabetes and heart disease. Those chemicals can be avoided by cooking meals at lower temperatures through using our claypot Steaming methods of cooking and also by cooking meats with foods containing antioxidant bioflavonoids, such as garlic, onion and peppers. For example, the high heats involved with commercial food canning rob foods of vast amounts of nutrients. In canned mixed vegetables, the vitamin C loss can be as high as 67%. In canned tomato juice, up to 70% of the original folic acid can be lost.

Finally, claypot may be used in the microwave very successfully in lower power settings. Some of my peers vow that glazed clay cookers were great for cooking dishes like lasagna and other pastas, casseroles and baked goods. However, nothing beats the old traditional charcoal cooking.

Trip To Cagayan during the Bataan and Good Friday.


Cagayan is a province of the Philippines in theCagayan Valley region in Luzon. Its capital isTuguegarao City and is located at the northeastern corner of the island of Luzon. Cagayan also includes the Babuyan Islands to the north. The province borders Ilocos Norte and Apayao to the west, and Kalinga and Isabela to the south. Along the way we stop at the Famous Alacala Milk Candy store Making it fresh everyday since 1930 in a small household operation in the town of Alcala, these milk pastilles made out of carabao’s milk wrapped in thin sheet of white Japanese paper. They are not too sweet but is enough to quench a sweet craving. The aroma is unmistakably that of warmed milk, so reassuring like the Pinoy version to Kraft caramel candies. It comes in packs of 12 priced at 20 pesos a pack . I simply gobble down a pack in one sitting. The Town of Sta Ana in Cagayan valley is the last town of the philippines in the North. It is over 400 miles away from the capital Manila and almost 15 hour away by land. Gone are the day where as a ghost town is now busltling with activity since they host it as Cagayan Special Economic Zone and Free Port. It is the new home of Surplus/Used car from Japan and Korea.
Along the highway, a market selling the freshest marine life from stingray, yellow fin, etc the price is a "catch" if you compared in Singapore dollar value.




Finally. after an ardous jourmey we reach a road leading toAnguib beach, home to two major resort complexes - the Macau based Sun city and Xiamen Based Eastern Hawaii. The Resort GM Mr Anthony, favourite phrase , we have a resort plenty of excitement "we have the sea, the land, and fresh air if all this bored you, we still have casino that never sleeps". Among the largest investments are two leisure-resort and gaming support service complexes, which is currently under expansion to provide a total of 600 rooms for foreign guests from the current 400 room capacity. rooms, including villas, KTV, water sports. Larger aircraft are also using the Tuguegarao airport which presently caters to international chartered flights to and from Macau, and has a frequency of two flights per week to bring tourists to Sta. Ana while the CEZA international airport remains to be completed. Oh, by the way, the currency use here are Hong Kong denomination of transaction. They have a chinese restaurant selling most of the authentic Hong Kong Dishes, Desserts & Beverages To Choose From.
Apart from relaxing on the beach and soaking up the sun, Here you can enjoy a picnic in the scenic area and take a refreshing swim in the natural swimming pool. Nearby you can find the fishing village with a nice sandy beach. You will never run out of activities and adventures to explore sailing to the sunset or nearby Crocodile Island ,Games fishing or rent a motorboat island hopping. Not like in Singapore the majority of us will be chatting on the phone. According to studies, more than 150 Million text messages are exchanged daily, which makes it the country with the highest per-capita number of text messages in the world. Even if you do not believe in statistics, a walk through any busy streets or shopping mall will prove the passion that Philippinos have developed for what is here known as "txt-ing". People continuously punch away with ardor on the keyboards of their cell phones, and the sound of in-coming messages has become part of the soundtrack of everyday life. Voice calls on mobile phones are much less frequent. Text messages have become one of the most important means of communications, and if you do not participate in it, you exclude yourself from social life.

Rediscovery claypot Mushrooms.



Mushrooms are the perfect food for the way we live today. They’re speedy and simple to prepare, blend well with other flavours, can be cooked almost any way you can imagine, and are winners in the, stakes too.

Mushrooms are best cooked quickly over high heat. More versatile than other specialties, they team well with seafood, chicken, veal and pork. You can also add them to soups and noodle dishes, or crumb them and deep-fry for a sensational starter. Oyster mushrooms are more perishable than other varieties, use within 1–2 days of purchase.

How to Clean Mushrooms

Mushrooms are extremely porous and soak up water like a sponge. Because they are mostly water, never soak fresh mushrooms.

Since commercially-available mushrooms are grown in a sterile medium, invest in a soft mushroom brush and simply brush away any clinging growing medium rather than washing with water. If you must, wipe them with a damp paper towel.

Be aware that salt releases the water in mushrooms, so judge the salt usage accordingly for your particular recipe.

There is no need to peel mushrooms. In fact, peeling mushrooms nullifies most of their flavor. Simply trim off any damaged spots and tough or dirty stems.

Don't throw out the soaking liquid--it can add more flavor to your sauce than the mushrooms themselves. You can also pulverize dried mushrooms with a food processor or blender, then use the mushroom powder to flavor sauces and stews.
