So, the one strawberry says to the other strawberry, “If you weren’t so fresh last night, we wouldn’t be in this jam!”

It's been a long time since I had eaten a home-made strawberry jam... when I open the can I'm surprised to find the can was full of whole strawberry in the jam !
The strawberry sweetness is consistency throughout the jam with great taste and color.
No wonder Baguio produce the best Strawberry jam in Philippine.

Kalinga Coffee

Singapore coffee culture has become a part of our busy lifestyle. Like an addict craving for nicotine, a shot of caffeine helps to relax the body and keeps the mind alert. In a typical Singaporean. In an air-conditioned Kopitiam Food Court, customers drink an average of 471 cups of coffee a day. The coffee is mainly "kopi-si" which is coffee with evaporated milk. They drink 300 cups of tea, mainly "Teh-si" and 86 cups of malt beverages such as Milo or Horlicks. These statistics show that coffee is the preferred hot beverage among laypersons in Singapore. (source from Kopitiam Investment Pte Ltd).
However, in Gamu our coffee sales shot up in demand during raining or cold spell it seems to conincide with the weather. When the first encounter with Kalinga coffee the aroma smell is totaly alien to me, like mixture of strong antiseptic fragrant acclaimed aroma and very strong texture taste of coffee bean, which I never taste it in other coffee brands in Singapore. However, when the smell diffuse and linger on it bring back memory of the olden days, coffee shops in Singapore used to roast their own beans in a rotating cylinder in the back lane. They produced excellent coffee and customers will return daily to get their dose. We don't see this nowadays and the coffee powder in the coffee shops are mass produced in factories. There is an urban legend that says that the coffee roasters add a little opium to the beans.

Coffee was brought in the Philippines centuries ago by the Spaniards while the country was a colony. They planted coffee trees on the highlands. And because of good combination of humidity, cold, soil and the tropical climate, these plantation flourished. By the 19th century, the Philippines was the 4th largest coffee producing country in the world.

Kalinga Gold is a blend of the Arabica bean, known for its heady aroma and intense flavor, the Robusta bean for additional richness, and the Excelsa bean for a twist of complex flavor. Kalinga Gold coffee was first introduced by Spanish Conquistadores between 1873 and 1881 to the tribes of the Cordillera Mountains in Northern Philippines. The entire crop of organically grown coffee was then shipped to Spain and sold for fabulously high prices, with preciously little trickling back to Manila's ruling class. Only today, more than a century later, is the same coffee available, and in limited quantities! Kalinga Gold prospered in the Cordillera under the leadership of an Igorot chieftain named Commising. Commising secured his influence and power by defending his people from the head-hunting Busoles of the North. Today, this same coffee is harvested in limited quantities by Commising's descendants -- the indigenous peoples of Kalinga and the Cordillera Mountains.

What Happen before 0859 Hrs in Gamu

In Singapore the power line is basically underground which is really a Streak contrast in Gamu Upi where most of the electricity transmission line, run across the skyline.
A piece of good news indeed, hopefully is a reality in the making... Hmmm

Meralco planning internet over power lines in the Philippines by Darren Murph posted Jul 13th 2009 at 10:46AM

While the concept of channeling the internet over power lines is far from new, it has yet to be implemented in any significant manner. If a top power distributor in the Philippines has its druthers, however, all that will change in the not-too-distant future. Manila Electric Company, better known as Meralco, is gearing up to use its power lines to bring broadband internet to more of the country, which currently sees just 20 million out of its 90 million inhabitants with access. In fact, the company has already made clear that it is "set to implement the pilot test," with the results guiding it in "determining scope and coverage of the project." Come to think of it, we've got a few dollars to spend on a rural broadband initiative here in the States.

Mang Inasal (Tagalog for Mr. Inasal)

In Singapore if memory did not fail me I recall we do not have any branch of Mang Inasal however in Philippine Mang Inasal (Tagalog for Mr. Inasal) is one of the fastest growing food chains in the Philippines. Edgar Sia II, a filipino born entrepreneur of Chinese and Japanese heritage, engaged in business at twenty years of age. He opened the first branch in December 2003 at the Robinson's Mall Carpark-Iloilo. As of July 2009, Mang Inasal has 152 branches all over the Philippines.
The element that bear a distinctively Pinoy stamp-grilling with charcoal, rice wrapped in banana leaves, a marinade concocted out of local spices and herbs, bamboo sticks for skewers, and the ambience that encourages kinamot (the Ilonggo term in eating with the hands that bring back memory of eating Muthu Curry in Singapore) whenever chicken inasal is served.

This familiar call of "balooooot!"

At around 8 pm in Gamu. this familiar call of "balooooot!" can be heard every night in Upi streets. So what is Balot ? It a fertilized duck egg with an underdeveloped embryo inside that is boiled and eaten in the shell sprinkled with some salt over it. In Philippine it has become a favorite midnight snack and beer companion to Filipinos. Initial my reaction to the Balot is OMG an embryo inside, to eat it was to close my eye practised the mind over matter and consumed it. The taste is quite similar to taste of a Century egg with a vingear smell, not that bad as long you do not want to get the detail biological aspect of it.

Cha (tea) baboy(pig), spicy tea baboy(pig), Manghang(spicy)cha buboy OR Bak kut teh

In Gamu , Isabela the local here love our claypot Bak kut teh (Hokkien: 肉骨茶). The only problems the dish had evolved and now reflected different names sometime they called Cha (tea) baboy(pig), spicy tea baboy(pig), Manghang(spicy)cha buboy. In Singapore and Malaysia Bak Kut Teh were infused with herbs such as Dong Quai, Cinnamon, Star Anise, and loaded with pork ribs, dried mushrooms, and heaps of garlic and the end result is concoction perfumed with a sweet herbal and earthy flavor. Pair with all this combination of the herbs, for the locals the taste bud is like having a wake up calls, and then there are rude awakenings an appetizer's blast of spicy bold heat, the children here will spit up in nano seconds. Through experiences we have to really go easily with the herb and had to balance layers of flavor and spice.

We have customers who have one taste of the dish took off like a rocket and I'm sure that he strike it off to taste it further. The flip side we also have customers who was hardened by the exposure increasingly for more fiery curries and spices towards ever hotter food request to satisfied his taste bud.

Bak kut teh (Hokkien: 肉骨茶)is a Chinese soup popularly served in Malaysia, Singapore, China, Taiwan (where there is a predominant Hoklo and Teochew community) and also, cities of neighbouring countries like Batam of Indonesia and Hat Yai of Thailand. The name literally translates as "meat bone tea", and, at its simplest, consists of meaty pork ribs simmered in a complex broth of herbs and spices (including star anise, cinnamon, cloves, dang gui, fennel seeds and garlic) for hours. However, additional ingredients may include offal, varieties of mushroom, choy sum, and pieces of dried tofu or fried tofu puffs. Additional Chinese herbs may include yu zhu (rhizome of Solomon's Seal) and ju zhi (buckthorn fruit), which give the soup a sweeter, slightly stronger flavor. Light and dark soy sauce are also added to the soup during cooking, with varying amounts depending on the variant. Our claypot is selling for P150.
