SSS - Sreet Saftely Serving



One of the common sight everywhere you look in Philippines, it is common to find people crowding in make shift or portable stalls in the streets selling anything from chicken feets , intestines, squid ball, grilled banana,etc. However, just be very careful eating the street food, as our recent case one of our source told us that 13 peoples in ilgan who consumed chicken intestine end up hospital and even meet fatality death. In Philippine accountability seem to be a gray area, unlike in Singapore where most of the food vendor had to be regulate,attend a basic hygiene course, typhoid shot every 3 years. Like me who handle my parents restaurant and prison kitchen or as long as you are in the food industries compulsory to attend the course. The objective  is sought to raise the food hygiene standards and standardize the training of its Basic Food Hygiene in Singapore, some of the administrative information just to set up a food stall in Singapore.
  • Personal Particulars and Academic Experience of the appointed Hygiene Officer. He/she must be trained and qualified in food hygiene and will be responsible to oversee plant sanitation, good hygiene practices and other matters concerning food safety. 
  • Medical Examination Certificates issued by Doctor on Typhoid inoculation for all food production employees (refers to any person who engages in or who supervises the preparation of any food in a food establishment). 
  • Information from business operator including particulars of Directors, Managers and Secretary and the registered address for LLP/Business/Company,employees etc
  • Lease (Tenancy) Agreement or any other documents to prove that you or your company is the legal occupier of the premises.
  • Planning Approval indicating that the premises has been approved to use as food establishment.
Inspector will advise the applicant on the licensing conditions that have to be complied with in order to make the premises suitable for the safe manufacture of wholesome food during the first inspection. Once the applicant has complied with all the licensing conditions, inspector may be informed to inspect the premises again. A food processing establishment licence will be issued to you if we are satisfied with your compliance with the licensing conditions for your premises. Ongoing and besides the inspection(s) conducted prior to the issuance of a license,  Hygiene inspector  would also conduct surprise checks on food processing establishments to ensure that food products are manufactured in a hygienic condition that are safe for human consumption. In Singapore the hawker or any food processing establishments in Singapore are categorized into four grades: A, B, C and D based on their food hygiene and food safety standards. Each establishment will be graded prior to the expiry of its license and reassessed annually.
Food processing establishments are graded with the aim to enable food manufacturers to be aware of their hygiene and food safety standards and the need for improvements. It creates an environment for food manufacturers to upgrade to strive for higher grades.
Food processing establishments are graded based on a set of criteria covering all aspects of hygiene and food safety standards. The criteria include:

  1. General cleanliness and housekeeping
  2. Food storage
  3. Food processing equipment and facilities
  4. Food handling and facilities
  5. Product identification and transportation
  6. Food safety system
  7. Food hygiene training
  8. Documentation
  9. Violation history.
 Food manufacturers strive for higher grades in order to remain competitive.  Food processing establishments with higher grades may use their grades as testimonies to show their clients that they have achieved high food hygiene and food safety standards. As buyers from supermarkets use food factory grading to identify good and reliable manufacturers when they source their supplies of food products, consumers can therefore enjoy safer food as buyers from supermarkets source from food processing establishments with higher grades.
But when the food is good, I had seem hawker getting a C grading had the longest queue. I guess it all boil down to individual responsibility, awareness assurance and a sense of accountability that they are serving the food to the public, and they had to the to provide safe and hygiene food to the public that food posioning is a can be very fatal.

EBU, Philippines - Fourteen people were brought to the hospital last Friday after eating lechon paksiw a day after the birthday celebration of their family patriarch in barangay Maricaban, Sta. Fe town.
Among those who were rushed to the hospital were Jesus Elosorio Sr., 63; his wife Sofia Elosorio, 64; their children Analou Elosorio, 24; Jurinda Elosorio, 37; Jesus Elosorio Jr., 30 and Maguinda Elosorio.
The grandchildren of the Elosorios who also ate the lechon paksiw along with their parents were not spared. They were identified as Reymad Elosorio, 11; Benjo Elosorio, 9; Tapia Elosorio, 6; Renato Elosorio, 2; all sons of Maguinda and her niece and nephews Ashley Olivar, 5; Meljun Tiongson, 5; Jimbert Batobalonos, 16; and Marbert Batobalonos, 19.
Nurse on duty Ana Tolod of the Bantayan District Hospital said in an interview with BANAT News that the family members were admitted to their hospital around 9 p.m. last Friday.
They were complaining of stomachaches, vomiting, nausea and losing body fluids, prompting them to put intravenous drips on the patients, especially the children who are considered less resistant than the adults.esus Elosorio Jr. who was interviewed by dyDD said they were celebrating the birthday of his father Elosorio Sr. last Wednesday and among the food prepared was lechon.
But because they were not able to consume the food they kept the leftovers and decided it to cook it as lechon paksiw the following day. But a few hours later all of those who ate the said food complained of stomachaches, nausea and started vomiting.
This prompted them to go to the hospital, but the doctors said they have yet to confirm whether it was the lechon paksiw that really led to the mass poisoning.

Food poisoning victims released from hospital
Fifty four of the 57 pupils from the Cupang Elementary School in Antipolo City
who were brought yesterday to the Amang Rodriguez Medical Center (ARMC) in
Marikina City because of food poisoning have already been treated and were
released this morning, the Department of Education said.
Another group of 27 victims were attended to at the Quirino Memorial Medical
Center (QMMH) in Quezon City. Only three among the 57 victims confined at
the ARMC have not yet been released, while 20 of those brought to the QMMH
are still under treatment.
Other schools in Rizal province whose pupils fell ill because of food poisoning
were the Mambugan Elementary School in Antipolo with seven, Morong
Elementary School with four, and Teresa Elementary School with one victim for
a total of 101. The total number of those admitted in the hospitals is 91 of which
65 were already discharged while 26 are still under treatment.
Education Undersecretary Ramon Bacani said DepEd health staff attended to
the pupils confined in the hospitals, talked to the parents and coordinated with
the Department of Health about the food items in the canteen and hospital
services. DepEd will also work closely with the Municipal Health Officer of
Antipolo City to monitor food safety inside the school campuses and their
vicinity.
“We will reissue DepEd Order Number 8 series of 2007 on school canteen
management and food safety. We will also intensify food sanitation and
advocacy even as we hold school heads accountable for the strict
implementation of the directive from the DepEd Secretary,” Usec Bacani said.
According to the report from the office of the Schools Division Superintendent of
Antipolo City, the pupils complained of stomach ache and were vomiting after
eating puto and banana cake. As an immediate recourse, the victims were
quickly brought to the nearest hospital. The District Supervisor followed the
victims to the hospital to attend to their needs.
